A 75-Year Square Tradition

SoDough Square brings authentic Detroit-style pizza to Florida, crafted with 24-hour fermented dough, blue steel pans, house red sauce, and a proprietary brick cheese blend.

Built on Detroit Tradition

This story starts in the 313, where square pizza is part of daily life. Founder Robert Bair grew up on Detroit-style pies and later brought that tradition to Florida. With over 40 years of combined pizza experience, the team prepares each pie the way it’s done in the Motor City. From Orlando to Tampa and St. Petersburg, the goal stays simple: serve true Detroit-style pizza with care and respect for its roots.
Dough That Leads the Way

Dough That Leads the Way

Every pizza begins with high-hydration dough that ferments for over 24 hours. It’s baked in traditional blue steel pans sourced from Michigan, giving each square its signature shape and texture. The dough rises tall and light, while the edges turn crisp and golden. This careful process creates the structure that defines Detroit-style pizza and sets the stage for every slice served fresh each day.
Crispy Edges. Bold Character.

The standout feature is the frico — a caramelized cheese crust that forms along the edges as the pizza bakes. That crisp layer adds texture and depth to every bite. House-made Detroit red sauce from fresh pack tomatoes tops each pie, along with a proprietary shredded brick cheese blend prepared in-house. Each detail works together to honor a 75-year-old pizza style built on quality and tradition.

SoDough Square serves Detroit-style pizza across Orlando, Tampa, and St. Petersburg. Guests can enjoy dine-in, takeout, or delivery throughout Central Florida and the Tampa Bay area. The restaurant has earned recognition, voted Best Restaurant in 2023 and Best Pizza in 2024 by the Orlando Sentinel. Through steady work and a clear focus on craft, this square pie continues to build its place in Florida’s food scene.
